1 Green Chili Pepper, Sliced Thinly
1 1/2 oz Vodka
1 1/2 oz Pineapple Rum
1 oz Lemonade*
1 oz Vanilla Simple Syrup*.
Casseroles, Boxcutters, Jigger, Muddler, Shaker Classic/Boston, Citrus Juicer, Strainer, Tablespoons, Collins Glass, Cup, Pitcher, Jars.
In a Cocktail Shaker, muddle a few Slices of Green Chili Pepper in the bottom. Fill with Ice. Add the Vodka, Pineapple Rum, Lemonade, and Vanilla Simple Syrup. Shake vigorously. Strain into a Collins Glass filled with Ice. Garnish with a few Slices of Green Chili Pepper on top.

*Lemonade:
8-10 Lemons, Juiced
1 cup Sugar
5 cups Water
Combine the Lemon Juice, Sugar, and Water, and stir until sugar has dissolved. Chill in the fridge for at least 1-2 hours.

*Vanilla Simple Syrup:
2 cups Sugar
1 cup Water
1 Vanilla Bean, sliced lengthwise
In a Saucepan over medium high heat, bring the Sugar and the Water to a boil; stirring to dissolve the sugar. Once the mixture has just come to a boil, take off the heat. In a heat proof Glass Jar, place the vanilla bean in and pour the syrup on top. Let the syrup come to room temperature and then place the Jar, covered, in the fridge for at least 2-3 hours. Strain off the vanilla bean and keep in an airtight container in the fridge.
