3 Passion Fruit
3 1/3 oz Granulated Sugar
4 oz Water
1 Lime
4 tablespoon Brown Sugar
3 1/3 Cachaça
8 1/3 oz Ground Ice.
Casseroles, Boxcutters, Jigger, Muddler, Shaker Classic/Boston, Straws, Libra, Tablespoons, Rocks Glass.
Start preparing Passion Fruit Syrup . To do this, open two fruits and recovered pulp and seeds with a spoon.
Heat the Sugar with high heat until it becomes golden brown, add the fruit pulp and a bit 'of Water. Let cook for 30 minutes. Only the syrup through a Sieve, and refrigerate.
Cut the Lime into cubes and put in a Shaker. Pour the Brown Sugar, then crush everything using a Pestle. Add Crushed Ice, then add the Cachaca and the Passion Fruit Syrup very cold. Shake with grace and dexterity of a bartender, then pour in Rocks Glasses previously refrigerated.
Serve with Straw.
