Serves 4:

4 cups Seedless Watermelon, Cubed
1 cup Ice
1-2 tsp Sugar (Optional)
3/4 cups Limoncello
3/4 cups Prosecco.
Blender, Boxcutters, Straws, Highball Glass, Cup.
Place the cubed Watermelon in your freezer for 1-2 hours (longer is OK too).
Once the watermelon is frozen, add it to your blender along with the Ice, Sugar and Limoncello. Blend on high for 1-2 minutes, or until the mixture is smooth. Add the Prosecco and blend until just combined, about 10-20 seconds.
Pour into Highball Glasses and serve immediately. For a pop of color, garnish with a few Sprigs of fresh Mint, and serve with Straws.
