1/4 cup Apricot Puree*
6 fresh Mint Leaves
1/2 Lime, Sliced in Wedges
2 oz White Rum
2 oz Chilled Soda.
Blender, Casseroles, Boxcutters, Jigger, Mixing-glass, Muddler, Stirrer (long Spoon), Highball Glass, Cup.
In the bottom of a heavy drinking glass, combine the mint and lime wedges, using a muddler to smash them all together and release some of the mint. Add the apricot puree, rum and club soda and stir to combine. Serve immediately.

*Apricot Puree, Makes 2 Cups:
4 Apricots Pitted And Chopped
1 1/2 cups Water
1/2 cup Sugar
Pinch Of Salt.

In a small pan, add the Apricot, water, sugar and salt. Cook for 3-5 minutes until thickened. Add to the jar of a blender and puree until smooth. Chill.
